I have the snipe time set to 0 hour and 0 minutes i.e. midnight.
When I ran the project yesterday at 10:03 pm, it said it would sleep for the correct amount of minutes (1 hour and 57 minutes) but when i checked the console output this morning the actual time the project ran was 00:41, which is quite far off the configured time.
Has anyone experienced this before? I'm wondering if it has something to do with my local machine's power settings or IntelliJ IDE settings, where I run it in.
Any guidance would be appreciated.

If your local machine went to sleep during that time, it will mess everything up. The boy runs on the system time, so if the machine goes to sleep, it will skew the system time.
