The Instance UV output of the Circle Splatter node creates quads sometimes.
Steps to reproduce:
Use a 2x2 image with alpha cut out sprites on each 2x2 grid, connect it to the Count input of a Circle Splatter node. Set the parameters to something that allows you to see all the instances spread out. click on the Instance UV output and notice that some instances retain their alpha cut out shape while others are quads, if you don't see any than try increasing the Count parameter.
I was able to correct this by masking out the quads from the Circle Splatter node's first output option.
