[Feature Request] Add support for Open-WebUI's RAG

I run Open-WebUI alongside Ollama and, now thanks to your fine work, Paperless-AI. Open-WebUI has a RAG that works with collections of files. I've been wanting to plug my Paperless-ngx documents into this for a while now so I could ask the LLM questions about my Paperless documents.

Describe the solution you'd like

Have Paperless-AI upload the PDF (and/or text extracted by Paperless?) to the Open-WebUI RAG and then create collections for the tags. This would allow me to use the Open-WebUI RAG/LLM chat feature to interrogate my Paperless-ngx documents.

Describe alternatives you've considered
I've considered creating a small script to just do this on a cron after Paperless-AI does it's thing, but thought it'd be a cool feature to have directly in this app.

Hey thanks for the valuable input. Never thought about that before.
Sounds interesting and will implement it right wenn I support other API URLs the user can define.
