The actual behavior of Sync Gateway is to check existence of indices and auto-create them when they does not exist.
Expected behavior
I would like to manage by myself the creation of indices (to set a custom name and choose the node on which I want them).
Would it be possible to have a configuration option to disable auto-creation of indices ?

This would open up Sync Gateway to several failure modes we've not had to consider before, including incorrect index definitions and orchestration problems.
An alternative might be to allow configuration of the specific things you wish to tune on the indexes SG initializes.
We've got upcoming work planned to support partitioned indexes which may be somewhat related to your desire to choose which node the indexes are deployed to. I am curious what your requirements are that involve changing index names.
This is a Feature request.
