macos-latest still indicates Intel Mac as per https://docs.github.com/en/actions/using-github-hosted-runners/about-github-hosted-runners/about-github-hosted-runners#supported-runners-and-hardware-resources so if we wanted M1 Macs, we would have to add macos-14 to the matrix.

The situation is now reversed macos-latest is M1 so we no longer test on Intel.
