Please try this:

 cd languagetool
 mvn package -DskipTests
 cp ./languagetool-core/target/languagetool-core-2.6-SNAPSHOT-tests.jar ../languagetool-community-website/lib/

..and then grails run-app

But that languagetool-core-2.6-SNAPSHOT-tests.jar contains the XMLValidator class, doesn't it?

Yes, both languagetool-core-2.6-SNAPSHOT-tests.jar and languagetool-core-tests.jar contain XMLValidator.class and are inside languagetool-community-website/lib/.

grails compile --refresh-dependencies and/or grails clean might help

That fixes it. grails run-app does not work, but grails war.

You will need to configure database access in grails-app/conf/DataSource.groovy (development for grails run-app and production for grails war)
