Cartographer_ros has a plugin to visualize submaps in RViz, but it's not compatible with ROS2. Some changes are needed for the ROS2 API and the changes in RViz.

I am curious where you got stuck? I am trying to do something similar with the grid_map library. The plugin shows in rviz2, but once added I get the following error:
Error: MultiLibraryClassLoader: Could not create class of type grid_map_rviz::GridMapDisplay
I am wondering if this is something stupid which I am overlooking or that you might stumbled on a similar problem?
