Update docker compose file to show all options

There are two parts to this issue

1. update docker file to respect SEMAPORE_DB_DIALECT_ID
2. update the docker compose file to expose all available options such as LDAP but leave them commented out

I believe this is the issue a created to deal with this PR I see there are conflicts and I will resolve them quick
