pantheon.switchboard-plug-pantheon-shell: Backport color-scheme fix

Backported from switchboard-plug-pantheon-shell 8.0.1 (#312449).

This sets preferred color theme for mutter.

• Tested basic functionality of all binary files (usually in ./result/bin/)
